Rhubarb Fool 1 1/2 pounds rhubarb 1 to 1 1/2 cups sugar 1/4 cup water Whipped cream, sour cream, or rich custard. Cut the rhubarb into 2-inch lengths and combine with sugar and water in a heavy 2-quart saucepan. Cover, and simmer until the rhubarb is quite tender--about 25 to 30 minutes. When cool, chill in the refrigerator. Then force the rhubarb through a food mill or sieve and fold into whipped cream sour cream, or a rich boiled custard. Serve very cold.
