Rice Pudding
2 oz butter 3 heaped tablespoons caster sugar 4 oz pudding rice half a vanilla pod, split lengthways 1 1/2 pints creamy milk 1/2 pint double cream a pinch of salt
All measurements UK Imperial.
Oven at 150 degrees C 300 degrees F. Melt the butter in a large, shallow, ovenproof dish. Add sugar and stir. Add rice and stir well until every grain is glistening. Continue cooking gently for about 5 minutes. The butter and sugar will caramelize very slightly. Add the vanilla pod, pressing against the dish so it spills its seeds. Add the milk and cream with care (the butter and sugar will spit) and add a pinch of salt. Bring almost to the boil, then place in the oven for at least 2 hours. If the top is browning too much, turn down the heat. Serve warm, rather than hot, and for a real treat serve loosely whipped cream on the side.
