Roly Poly Pudding

ROLY-POLY PUDDING (Utah) (Serves 8)
2 cups flour 1/2 teaspoon salt 4 teaspoons baking powder 1/4 cup shortening, margarine or butter 3/4 cup milk 1/2 cup jam, any flavor
Combine flour, salt, and baking powder. Cut shortening into flour mixture until it resembles coarse cornmeal. Add milk to make a soft dough. Do not over handle or dough will be tough. Roll or pat to make a rectangle about 1/2 inch thick. Spread with jam. Carefully roll jam up inside dough like a jelly roll. Place on lightly greased baking sheet, seam side down. Bake at 400 degrees for 20-25 minutes.
To serve: Mix 1 tablespoon sugar, vanilla, and dash nutmeg into cold milk or cream. Pour cream over thick slices Roly-Poly.

This is one I remember my mum making. She used to bake it in a pan with a lemon sugar syrup poured over it.
This reduced and thickened with cooking, and just spooned over slices of the pudding, and served with a rich pouring cream
