Sticky Toffee Pudding
Soak 8 ounces chopped dates in half a pint of boiling water.
Cream (beat) together 6 ounces dark muscovado sugar and 2 ounces of butter till soft. Beat in 1 large egg. Add 8 ounces self raising flour, chopped dates and their soaking water a teaspoon of vanilla essence and a couple of pinches of bicarbonate of soda.
Bake at 180 degrees celsius for about 30-40 minutes (in a 8 inch square pan, well greased).
Prepare toffee - melt together in a pan, 2 ounces butter, 10 tablespoons double cream and 2 ounces light brown sugar.
Take pudding out of oven, pour over toffee sauce whilst still hot, and then put under the grill until the toffee sizzles and turns golden.
Eat with cream, ice cream, custard etc, it's good cold as well.
Sit and relax while the pudding hits your tummy.
