Suet Pudding

2 to 3 oz oats
1 pt milk
5 eggs
4 oz currants
1 to 2 oz suet

Soak the oats overnight in the milk. When you want to boil your
pudding, break the eggs and beat them well with salt, pepper, mace
and ginger. Then take some spinach, some parsley, some borage, some
beet leaves and some leek blades, mince them with a little thyme
and majoram. Add this to the egg mixture together with the suet
and the currants. Now add the flour to bind it, experience will
teach you how much. Boil the pudding for 1 hour and serve with
melted butter.
