Sweet Potato Pone 02

Sweet Potato Pone
1/2 cup butter
1 cup sugar
3 eggs
1/2 cup milk
Juice of 1 orange
Grated rind of 1 orange
1 teaspoon ginger
1/8 teaspoon cinnamon
1/8 teaspoon all spice
1/4 teaspoon nutmeg
3 cups grated raw sweet potato (peeled)
Melt butter in 1 1/2 quart pan (long and shallow). Toss grated
sweet potato in melted butter. Mix remaining ingredients and pour
over sweet potatoes. Bake at 350 degrees for 1 hour or until set.
