Sweet Potato 02

SWEET POTATO PUDDING
1 cup sugar
3 tablespoons butter
1 cup milk
1 egg
2 cups grated sweet potato
1 teaspoon vanilla
Put all ingredients together in a 15x9x2-inch baking dish. Bake
in a preheated 350 degree oven, 1 to 1 1/2 hours. Stir 2 or 3 times
to keep from burning. Bake until brown on top.
Yield: 6 servings
