Syllabub

1/4 tsp ground nutmeg
1 piece lemon peel
1/2 pint sweet white wine
1/2 pint double cream
2 floz sherry
1 tsp orange flower water
2 egg whites
1&1/2oz caster sugar

6floz wine
2floz milk

Leave the nutmeg and lemon peel to steep in the wine overnight.
Strain the wine and add it to the cream with the sherry and orange
flower water. Whip the egg whites until stiff. Fold into the cream
and continue whipping with a wire whisk. Combine the milk and wine
for the base and pour a little into six glasses. As you whip the
cream and wine mixture, spoon the resulting froth onto the wine
base as you go along. Serve as soon as possible.
