Tapioca with a crunch

1 egg
1/4 cup sugar
2 3/4 cups scalded milk
3 Tbsp. tapioca
1/4 tsp. pure vanilla extract
pinch of salt
1 vanilla bean

While scalding milk, add the vanilla bean. Take out vanilla bean,
cut in half and scrape out seeds. Put in the milk, save bean for
other use.

Mix egg, sugar, salt and tapioca. Slowly add milk. Bring to a
simmering boil. Turn down to low heat and simmer for 20 minutes.
Add the vanilla extract.

Nice hot or cold and especially with fruit. Can be done in microwave
as well.
