7-layer Dip with Homemade Salsa
Salsa
1 large bunch of green onions 1 large bunch of cilantro 3 cans of diced tomato and peppers lemon juice lime juice 1 small can (4 - 6 oz) of chopped green chiles salt
Wash green onions and cilantro. Let them dry (shake out all excessive water). Chop up green onions (both white and green part). Chop up cilantro where leaves are attached to stems (when you just have the stems, don't chop any more. Throw this portion away). Open can of green chiles. Combine all three ingredients in large bowl. Pour lemon juice on ingredients that are in bowl. Make sure that you put a good layer of lemon juice on ingredients. Give one good squirt of lime juice on ingredients. Sprinkle a bit of salt in bowl. Open the three cans of tomatoes/peppers and pour some of the liquid out into the sink. (There is just a little too much liquid in the cans.) Pour cans into the large bowl with the other ingredients. Mix everything up. The salsa is done.
"7 layer dip" For a 9x13 pan do the following:
1 large can of fat free refried beans 1 container of sour cream 2 large tomatoes lettuce 1 small onion salsa (recipe above) 1 small can of chopped black olives 1 bag of shredded Mexican cheese 2 jalapenos (or any other hot pepper) 1 green onion
Open can of refried beans. Warm beans in another pan - a sauce pan (not the 9x13 pan). Beans are easier to work with when warmed. Spread beans on bottom of 9x13 pan. (Make sure beans or any other ingredient blends together in pan. Everything must lay evenly on pan.) Chop up small onion (very fine) and spread on top of layer of beans. Spread entire container of sour cream in pan. Pour salsa on top of sour cream. Make sure that you don't get the liquid in this layer (avoid the liquid - it makes dip very runny!). Chop up very fine the lettuce. Spread next layer. Chop up tomatoes. Spread next layer. Spread layer of shredded cheese next. Spread chopped black olives next. Chop green onion (only green portion - just for looks). Sprinkle on top. Chop jalapenos and sprinkle on top.
You always want to make this item right before you intend to serve this so that everything is still fresh!
