7-Layer Dip and Variation
1 can refried beans 1 can Ranch Style beans 1 can green chilis 1 can Rotel tomatoes, drained Salsa of choice 1 cup sour cream 1/2 cup mayonnaise 1 pkg. taco seasoning mix 1 bunch green onions, diced 2 - 4 cups cheese, shredded shredded lettuce
Mix sour cream,mayonnaise and taco seasoning together. Set aside. Mix chilis, Rotel tomatoes and green onions together. Mix refried beans and Ranch style beans together.
Warm beans. Put in serving dish. Layer half the cheese on top, then salsa, then sour cream, vegetables and top with remaining cheese. The 7th layer is the shredded lettuce. If I am serving it immediately and plan on it all being eaten! I add this 7th layer on top of the final cheese. If not, I serve the lettuce on the side so that it doesn't get limp.
Variation of 7-Layer Dip
Same ingredients as above.
Mix all ingredients together in a large kettle or iron skillet. (Except for the lettuce!!) Heat. Serve over fritoes or whatever chips you like. Serve with sides of grated cheese, thinly sliced green onions, sour cream, salsa and shredded lettuce. Fill a plate with a layer of Fritoes and then put as much of the "dip" as you want and top off with any of the sides that you want.
