White Bean Pate

1 Tbsp canola oil
1 cup onion, chopped
2 cloves garlic, minced
1-pound can cannellini or white kidney beans
juice of 1/2 lemon
1/4 cup parsley
1 Tbsp soy sauce
1/4 tsp. thyme
1/4 tsp. dried basil
1 tsp. cumin
pepper to taste

Heat oil over medium heat. Saute onion and garlic, covered, until
golden (about 7 minutes). Combine onion and garlic with all of the
remaining ingredients in a food processor. Process until smooth.
Makes a good spread for crackers or crostini. Serves 6.
