Corn Dip

3 15-oz cans Mexicorn, well drained
1 cup mayonnaise
1 cup sour cream
1 pkg. shredded Mexican cheese
salt and pepper to taste
splash of lemon juice (optional)
canned green chili, well diced (optional)

Mix all ingredients the night before serving and chill. Serve with
Frito's Scoops corn chips.

You may wish to add jalapenos to taste for a zestier dip.

This is a delightful blend of flavors that is as visually appealing as it is delicious. I prefer the jaleps to the chilis and I don't use the lemon juice. But this is so easy and fast and is a hit with a crowd.
