Curry-Apricot Dip
Yield: 4 servings

1 t margarine
1 1/2 t curry powder
1/4 c minced onion
1 c lowfat sour cream
1/2 c drained canned apricots

Melt margarine in a skillet. Saute' onion in margarine until onion
is transparent. Add apricots and curry powder. Cook 2 to 3
minutes, mashing apricots with a fork. Cool. Combine apricot
mixture and sour cream in a bowl. Cover bowl and chill in refrigerator
for at least one hour, to let the curry flavor develop.
