Yield: 8 Servings 2 15 oz cans chick-peas 2 lemons, juiced 2 cloves garlic, or more to taste 3 T apple cider vinegar or lemon juice 1/2 c tahini 2 T extra virgin olive oil salt and pepper to taste 1/2 c chopped parsley lemon wedges pita bread raw vegetables for dipping
Drain the chick peas, reserving liquid. For really smooth hummus, remove skins. Blend the chick-peas in the blender in two batches. Blend the lemon juice, garlic and vinegar in the blender until smooth. Add to chick-peas. Add tahini and oil to the chick-peas and stir until smooth. Season to taste with salt and pepper. Garnish with parsley and lemon wedges. Serve with pita bread or a bowl of raw vegetables for dipping.
