Tapenade

250 gr (9 oz) good black olives, stoned
50 gr (2 oz) anchovies
25 gr (1 oz) capers, drained
2 garlic cloves
2 tablespoons olive oil

Place all the ingredients, apart from the olive oil, into a blender.
Blend for about 5 minutes, then add the oil. Decant into small
clean jars with screw-on lids, and store in the fridge.
