Southern Caviar

3 16-ounce cans black eyed peas, drained
8 small white onions thinly sliced and separated into rings
1 TBS. freshly ground black pepper
1/4 tsp. Tabasco sauce
1 small jar, capers, drained
1 tsp. garlic powder
16 ounce bottle Italian dressing
3 dashes Liquid smoke

Mix all ingredients. Cover and refrigerate at least 24 hours,
stirring occasionally. Drain and place in a serving bowl. Serve
with crackers. Keeps up to 5 days. Yield: 15-20 servings
