CREME DE MENTHE
8 cups water
8 cups sugar
3 Tbsp pure vanilla extract
1 Tbsp green food coloring
1 Tbsp essence of peppermint, also known as peppermint spirits
1 pint 190 proof clear alcohol (150 proof will do)
Mix all ingredients in a 1 gallon glass jar. Secure lid tightly.
Place in dark, cool place and allow to age for at least three weeks.
