Homemade Ginger Ale Serves: 16 3 cups (3/4 pound) sliced (1/4 inch) unpeeled fresh ginger 3 cups sugar 9 cups water 1/4 cup lime juice 1/2 cup coarse sugar 12 cups chilled club soda 16 lime slices
Process ginger in food processor till coarsely chopped. Place chopped ginger, sugar and water in large saucepan. Bring to simmer over medium heat. Simmer till sugar has dissolved, stirring occasionally. Increase heat to medium-high and bring to rolling boil. Reduce heat to medium; cook 30-40 minutes till liquid is reduced by 1/3. Remove from heat and cool. Strain syrup into large pitcher. You should have 5-6 cups of syrup. Discard ginger. Cover with plastic wrap and refrigerate till ready to use. For each ginger ale dip rim of 12 ounce glass into lime juice then into coarse sugar. Add ice cubes and 1/3 cup syrup. Top with 3/4 cup club soda. Garnish with lime slices.
