Ginger Beer Plant
1/2 teaspoon sugar 1/2 teaspoon ground ginger 1/2 teaspoon dried yeast in a jar 1 cup warm water
1/2 teaspoon sugar 1/2 teaspoon ground ginger
4 cups sugar 6 cups water over medium heat
18 cups water 1/2 cup lemon juice liquid from strained ginger plant
Put 1/2 a teaspoon each of sugar, ground ginger, and dried yeast in a jar Mix in 1 cup of warm water Feed this ginger plant with 1/2 a teaspoon each of sugar and ground ginger every day for a week, Keep covered with a cloth. (you can keep it on a kitchen windowsill.) After a week strain liquid and reserve sediment. In a large pot dissolve 4 cups of sugar in 6 cups of water over medium heat When sugar is dissolved remove from heat Put in another 18 cups of water, 1/2 cup lemon juice and the liquid from strained ginger plant Mix well and bottle. Divide the sediment from the Ginger plant between 2 jars Add 1 cup of warm water to each jar Commence feeding your 2 plants as before. In the original recipe it said it was OK to drink after 5 days, but it is a lot better if left at least 2-3 weeks or even longer.
The ginger plant seems to enhance its ginger flavour with age, the more times you use it the better it gets. I don't make a batch up each week I sometimes just throw out the liquid and 1/2 the ginger plant if I don't need it and keep it going for next time
