Ginger Beer Put into a screwtop jar: 8 sultanas, juice of 2 lemons, 5 ml (1 tsp) lemon pulp, 20 ml (4 tsp) sugar, 10 ml (2 tsp) ground ginger, 300 ml (1/2 pint) cold water.
Leave to ferment for 2 to 3 days.
Then feed daily with 10 ml (2 tsp) sugar, 5 ml (1 tsp) ground ginger.
On the seventh day, strain, reserving the sediment. Add juice of 2 lemons to the strained liquid.
Dissolve 450 g (1 lb) sugar in 400 ml (3/4 pint) boiling water. Add 3 litres (5 pints) cold water. Pour onto lemon juice and strained mixture. Seal in jars with airtight tops. This is the actual ginger beer. Leave 3 weeks before using.
Meanwhile, add 150 ml (1/4 pint) cold water to half the sediment and continue feeding daily. Give the rest away.
