Mulled Cider
For every quart of apple juice or apple cider

1/4 cup packed brown sugar
8 whole cloves
8 whole allspice
2 sticks cinnamon
few grains of salt (optional)

Place all items in a large pot; set over low heat; stirring to
dissolve sugar. Slowly heat, stirring occasionally: DO NOT LET IT
COME TO A FULL BOIL. Put through a fine strainer before serving.

An optional step is to thin slice an orange (and some lemon or
lime) and float the slices in the pot for about 10 minutes before
serving, and then remove.

Notes:

A crock pot set to low keeps the cider warmed without boiling.

In a large batch, add a quart of cranberry juice.
