Simple Yellow Cake Mix

2 cups (250 grams) cake flour
1 1/2 cups (300 grams) fine granulated sugar
1 to 1 1/2 teaspoon (5-7 grams) salt
5 teaspoon (15 grams) baking powder
6 teaspoon (18 grams) skim milk powder
6 tablespoon (90 grams) vegetable shortening
1/2 teaspoon vanilla flavor
1/2 teaspoon orange flavor
1/2 teaspoon butter flavor

Sift all dry powdered ingredients,place in the mixer bowl,place the
shortening and other ingredients and mix it slowly for 5 minutes, or
until well blended.


Batter preparation:

2 whole eggs (100 grams)
1 egg yolk (12 grams)
3/4 cup water (180 grams)

Add this to the dry ingredients and mix as follows:

5 minutes medium speed, scrape down bowl and beater, then mix for 5
minutes high speed.

Note: The egg yolk is optional but desirable if you want to improve
cake crumb color and texture. You can tint the batter slightly with
yellow coloring if you if you want to omit it; and do not want more
cholesterol from this added egg yolk.

Pour batter into 8" layer cake pan (greased and floured) half full.
Bake for 30-35 minutes or until done (350 degree F.)
