Lithuanian Cheese Dumplings
8 oz cottage cheese (preferably small curd) 1 egg 1/2 cup flour pinch mint 1 pot boiling water 1 tbsp uncooked bacon (optional)
Mix cottage cheese, egg, bacon (if desired) and mint. Add flour and knead until the mixture is no longer sticky.
Roll out dough into balls slightly smaller than golf balls. Roll them in flour to coat.
Drop in boiling water and cook for 12 minutes (20 minutes if bacon is added). Drain and serve as a side dish with butter and sour cream.
