CHEESE DUMPLINGS IN TOMATO SAUCE 1 med. onion, chopped 3 Tbsp. margarine 3 Tbsp. flour 3 cup tomato juice 1 1/2 cup biscuit mix 2/3 cup milk 6 oz. Cheddar cheese, cubed Grated cheese for garnish Saute onion in margarine in a large saucepan which has a tight lid. Stir in flour, mix well and add tomato juice. Stir until hot and slightly thickened. Keep simmering. Combine biscuit mix and milk in bowl. Knead lightly on floured board, then roll out to 1/4 inch thickness. Cut into 2 1/2 inch squares, place a cheese cube on each, pull edges of dough around cube and press together to seal. Drop dumplings into hot tomato sauce, cover tightly and cook on low heat for 18 minutes. Do not lift lid! Serve dumplings in tomato sauce, topped with grated cheese.
