Mince Meat Dumplings 1 cup mashed potato 1 egg 8 ozs mince meat 1 cup SR flour 1/4 teaspoon salt Mix together potato, flour and salt. Add beaten egg to make a firm dough. Mould mince into balls the size of hen eggs then mould dough around these. Drop into a suacepan of boiling water, cover tightly and cook gently for 10 minutes. Serve with a green vegetable and parsley sauce or tomato sauce.
