Spinach Frittata

250g English spinach
1 1/2 tablespoons of olive oil
4 eggs
2 garlic cloves, chopped
pinch of ground nutmeg
sea salt
freshly ground black pepper
80g Kings Island Black Label Brie

Heat the oil in a 18cm frying pan over a high heat. Add the garlic
and spinach and saute well. Reduce the heat to medium and add beaten
eggs, nutmeg, salt and pepper. Cook for 2 1/2minutes, then twirl
the frying pan and cook for another 2 minutes. Place the frittata
on a serving plate and cover with the King Island cheese, and serve
immediately.
