Yogurt

Boil some milk (1 quart) and remove it from the heat.

Let it cool to around 85 deg F (warm to the touch, room temp in S.
India :) and add half a cup of buttermilk or 1-2 oz. yogurt.

Let this set for a few hours (at least 4 hours, though overnight
is OK) and then refrigerate it.

It keeps for about a week in an airtight container. Remember to
save a few tablespoons to continue the culture! The first time
with a new culture probably won't have the best consistency, but
if you continue to use the same culture, the texture will become
excellent (just like S. Indian yogurt! :).
