Bahian Muqueca Serves 4-6
1 lb fresh medium-sized prawns,shelled, deveined 1 lb cod fish, sliced to medium size chunks 6 tablespoons olive (or vegetable) oil 2 tablespoons dende oil (West African palm oil) 2 large yellow onion, finely chopped 3 cloves garlic, crushed 2 tablespoon fresh lemon juice 4 large tomatoes, peeled, seeded, chopped 3 tablespoons chopped cilantro 1/4 teaspoon black pepper 1/2 teaspoon salt 1 fresh red hot pepper 1/2 can coconut milk (7 fl. oz.)
Heat the vegetables oil in a medium-sized pot and stir-fry the onion until golden brown. Add the garlic, dende oil, cayenne pepper, cod and prawns. Stir-fry for 3 minutes. Add the salt, lemon juice, tomatoes, and coconut milk. Simmer for 8-10 minutes.
