Baked Fish Fillets
1 1/2 lbs (680 g) thick fish fillets (your favorite), cut bite size 1 1/4 cups (300ml) milk 3 Tbsp (50 ml) all-purpose flour 1/2 tsp. (2 ml) dill weed 1/2 tsp. (2 ml) salt 1/8 tsp (0.5 ml) pepper
2 Tbsp (30 ml) hard margarine or butter 1/2 cup (125 ml) dry bread crumbs 1/4 tsp. (1 ml) poultry seasoning 1 tsp (5 ml) parsley flakes 1/2 tsp. (2 ml) onion powder 1/8 tsp (0.5 ml) pepper
Place fish pieces in ungreased shallow 2 quart (2 L) casserole. Whisk milk into flour in small saucepan until no lumps remain. All dill weed, salt and pepper. Heat and stir until boiling and thickened. Pour over fish. Topping: Melt margarine in small saucepan. Mix in remaining 5 ingredients. Sprinkle over sauce. Bake, uncovered, in 400 F (205 C) oven for about 40 minutes until fish flakes when tested with fork. Serves 6.
