Baked Haddock

4 slices salt pork
1 onion, sliced
2 1/2 pounds haddock or cod fillets
3 tablespoons melted butter
2 tablespoons flour
1 cup milk
1 bay leaf
Salt and pepper, to taste
1/4 cup lemon juice

Preheat oven to 350 degrees. Place the salt pork in the bottom of
a shallow baking dish. Sprinkle with half the onion slices. Arrange
the fish fillets over the onion and salt pork. Sprinkle with the
remainder of the onion slices. Spoon the butter over all and
sprinkle with the flour. Pour the milk over the fish. Add the bay
leaf, salt, pepper, and lemon juice. Cover and bake 20 minutes.
Remove cover and bake 20 minutes longer.
