Cod Cheeks Yield: 2 Servings
8 cod cheeks; medium sized 2 tb butter; (2-3) or olive oil
2 eggs 1 dl cream 1 tb Dijon mustard 1/2 ts dried dill 1/2 ts basil
1 1/2 dl fish stock 4 tb madeira 2 tb leek; chopped sea salt and freshly ground pepper
Clean the cod cheeks and dry. Make the egg mix in a bowl and roll the cod cheeks in the mix. Melt the butter in a pan and fry the cod cheeks until golden brown. Remove the cod cheeks from the pan and keep warm. Pour the fish stock and madeira on the pan and boil. Add the and season with salt and pepper until the sauce boils.
Boiled potatoes go well with this recipe.
