Fish Sticks

1/3 cup (75 ml) all-purpose flour
2 large eggs
4 tsp (20 ml) water
1 cup (250 ml) fine dry bread crumbs
1 tsp (5 ml) salt
1/4 tsp (1 ml) pepper
1 tsp. (5 ml) paprika
1 lb (454 g) cod fish filets, skin removes, cut 3 1/2 x 1 inch (9 x 2.5 cm)
2 Tbsp. (30 ml) hard margarine or butter

Pour flour into small bowl. Beat eggs and water in separate small
bowl. Stir bread crumbs, salt, pepper and paprika in separate small
bowl. Dip each fish piece into fluid to coat, then dip into egg
mixtures, then into bread crumb mixture. Set on large plate. Melt
margarine in non-stick frying pan. Add fish sticks. Brown both
sides until medium to medium-dark and fish flakes easily when tested
with fork. Makes about 20 fish sticks.
