Pan-Fried Catfish

2 catfish filets
1/3 cup dijon mustard
1 egg, beaten
1 1/4 cup cornmeal
1/4 cup dried ground ginger
olive oil for frying

Mix the mustard and egg and slather thickly on the catfish filets.
Mix the cornmeal and ginger.

Dip the mustard-covered fish in the seasoned cornmeal. Saute in
the oil until just cooked through (137 degrees F).

Cooking makes the mustard much more mild. This is the best fried
fish I've had.

Serve with carrots cooked with fresh ginger in apple juice.
