Salmon Cakes
15 1/2 ounce can red salmon, drained, deboned, and flaked 3/4 cup saltine cracker crumbs 1 egg, slightly beaten 2 Tablespoons chopped onion 3 Tablespoons milk 1 Tablespoon fresh lemon juice 2 Tablespoons butter or margarine
Combine ingredients except butter or margarine, blending well. Shape into 4 flat patties.
Melt butter or margarine in small skillet; saute patties on both sides until golden brown and heated through. Add more butter or margarine to skillet, if necessary.
