Salmon Patties

14-1/4 oz can pink salmon, bones and cartilege removed (Do not drain)
2 eggs
1/4 cup chopped onion
1/4 cup chopped bell pepper
salt and pepper
dash garlic
dash season salt (optional)
2 T corn meal

Mix all ingredients together. Add JUST enough flour to hold
together. Be careful - too much will make them bland and dry!
Form into 1/2 inch thick 3 inch diameter patties. Heat oil in
frying pan over med-high heat. Place patties in oil and cook until
lightly browned on bottom (5 min or so), turn and brown on the
other side. Turn heat down to low and cook an additional 5 minutes.
Drain in paper towels.
