Salmon Patties Yield 5 salmon patties. 15 oz. can red or pink salmon, bones removed 2 Tbsp minced onion 1 Tbsp minced fresh parsley 1 large egg salt, pepper, dry dillweed to taste some fresh squeezed lemon juice oil to saute Using a food processor fine chop onions and parsley. Add salmon, egg, seasonings and lemon juice and pulse a few seconds thoroughly to combine everything. Remove mixture and form into patties by hand. You should be able to form 5 patties from the recipe.
Heat a small amount of vegetable oil in a non stick skillet and brown nicely on both sides, reduce heat and continue to cook and turn to heat several more minutes. Serve with lemon wedges and tarter sauce or sour cream if desired.
Note: some people like to add some dried breadcrumbs to the salmon mixture as a filler. It's totally optional.
