Salmon Potatoes 02

SMOKED SALMON JACKETS
4 baking potatoes, about 280 - 300 g / 10 - 11 oz each in weight 170 g pack smoked salmon trimmings 200 g tub creme fraiche juice of 1/2 lemon 1 Tbsp olive oil 75 g pack watercress
Wash the potatoes and pat dry, the prick each one all over with a fork. Put the potatoes on a piece of kitchen paper in the microwave. Cook on High for 20 minutes, turning halfway through until the potatoes are completely cooked through. Leave them to stand for 1 minute.
While the potatoes are cooking, chop any larger smoked salmon trimmings into pieces, the tip them all into a bowl with the creme fraiche and half the lemon juice. Season with plenty of black pepper and a little salt (you wont need much as the salmon will be quite salty). Mix the remaining lemon juice with the olive oil then toss together with the watercress. Season with salt and pepper.
Cut a cross in the top of each potato and squeeze to open it out. Fill each one with the smoked salmon and watercress mixtures and season with black pepper.
Serves 4.
