Salmon Steaks with Mustard Sauce
Number of Servings: 4

1 oz butter
1 Tbsp olive oil
4 salmon steaks
1 Tbsp red wine vinegar
1 Tbsp wholegrain mustard
3 Tbsp creme fraiche
salt and freshly ground black pepper

Heat the butter and oil in a frying pan. Add the salmon steaks
and cook over a moderate heat for 12-15 minutes, turning occasionally
until cooked through. Remove from the pan and keep warm.

Add the vinegar and mustard to the pan. Cook for 1 minutes, stirring
well to deglaze the pan.

Stir in the creme fraiche and season to taste and heat through.
pour over the salmon steaks and serve immediately.
