Salmon en Papillote
Number of Servings: 2

2 tsp oil
4 oz carrots, cut into matchsticks
5 oz courgettes, cut into matchsticks
1 medium leek, cut into matchsticks
1 Tbsp shallots, finely chopped
2 fl oz water
1 1/2 Tbsp dry sherry
1 Tbsp parsley
1 Tbsp lemon juice
2 tsp lemon peel, grated
1 tsp Dijon mustard
1/4 tsp salt
1/8 tsp white pepper
2 salmon steaks

Preheat the oven to 375F/190C/Gas Mark 5.

In 1 tsp of the oil, fry the carrots, courgettes, leek and shallots
for 4-5 minutes. Stir in the remaining ingredients excepts the
salmon and cook for a further 2 minutes.

Use the remaining oil to grease two pieces of foil. Place the
salmon steaks on the foil and cover with the vegetables and the
liquid. Seal the foil parcels and place in the oven for 15-20

This was a very simple and quick meal. It had an amazing abundance of flavors. Just cook some brown rice to go with it and you're all set.
