Salmon

4 (4-ounce) salmon fillets (an inch thick or so)
1/4 tsp salt
1/4 tsp. pepper
Cooking spray
3 tablespoons low-sodium soy sauce
3 tablespoons orange juice
1/2 tsp. dark sesame oil

Sprinkle fish with salt and pepper. Coat nonstick skillet with
spray, place over high heat until hot. Add fish, cook uncovered
about 3 minutes per side. Cover and cook 3 additional minutes or
until fish flakes easily. Remove and keep warm. Add soy sauce,
orange juice to skillet; cook high heat 1 minute, stirring to
deglaze skillet. Add oil, stir well. Pour sauce over fish and serve.
