Jamacian Steam Roasted Snapper
snapper (any kind, I like mangrove)
Gut and scale fish. Sprinkle inside and out with salt, pepper,
thyme and parsley. Stuff the inside with garlic, green onions and
a sweet onion.
Add a pat of butter and wrap in foil. Put on the grill away from
direct heat for 15 minutes.
