Trout Pine Nuts

Pine-Nutty Trout
1/2 c. toasted pine nuts (about 2 oz.) 1/4 c. all purpose flour 2-12 oz. whole trout, heads and tails removed Olive oil Fresh chopped parsley Lime wedges Grind the pine nuts and flour in a food processor. Transfer to shallow dish. Season generously with salt and pepper.
Cut each trout in half lenghthwise into fillets. Remove any bones. Brush fish with oil. Heat 1 Tblsp. oil in a heavy large skillet over med. high heat. Dredge fish in nut mixture.Press to adhere. Cook until brown and crisp, about 2 minutes. per side. Transfer to plates. Sprinkle with parsly, and garnish with lime.
Note: Any nut can be substituted for the pine nuts. Toast them for more flavor.
