Baked Apples
Serving Size : 4

4 Granny Smith apples or Rome apples, any hard apple

1/4 cup plus 2 tablespoons water
2 tablespoons orange juice
3 tablespoons brown sugar
2 tablespoons granulated sugar
1 pinch cinnamon
1 teaspoon lemon juice
2 teaspoons lemon zest
1/8 teaspoon salt
1 tablespoon brown sugar (optional)

Heat oven to 350F. Mix together syrup ingredients and bring to a
boil. Peel the apples, removing only about the top two inches. Core
the apples and place them upright in a baking dish. Pour the syrup
over and into the apples. Cover with foil and bake for 30 minutes
or until a fork pierces apple easily. Sprinkle tops with a little
extra brown sugar and broil for 3 minutes. Serve warm with ice
cream.
