White Wine Pears & Toffeed Yogurt
Yield: 4 Servings

1 cup thick natural yogurt
1 cup whipped cream
3 Tbsp soft brown sugar
6 pears
3 cup white or red wine (1 bottle)
1/2 cup sugar
1 cinnamon stick

Lightly fold yogurt through the whipped cream and spoon into a
serving bowl. Completely cover the top with soft brown sugar,
cover with plastic and refrigerate overnight. The sugar will
caramelize into a lovely toffeed topping.

Peel pears, dig out most of the core. Combine wine, sugar and
cinnamon stick and bring to the boil, stirring. Add pears, cover
and simmer for 20 to 30 minutes until pears are tender. Remove
pears and boil the liquid until it reduces to a syrupy consistency.
Remove from the heat, cool, pour over the pears and chill or leave
at room temperature until ready to serve. To serve, swirl the
caramelised topping through the yogurt cream and dollop onto four
plates. Top with a pear and drizzle syrup on top.
