Baked Apple Creme

750 gr apples
100 gr sugar
30 gr butter
Juice of 1/2 lemon
1 pinch cinnamon
2 egg whites
1 tsp sugar

Wash apples, cut into 8 pieces, place in saucepan and just cover
with water. Add sugar and cook until done. Press through a sieve,
add half of the butter, juice from 1/2 lemon and cinnamon. and mix
well. Use remainder of butter to grease baking dish, pour apple
mixture in dish. Beat egg whites and sugar until very stiff,
distribute over apple mixture. Bake in 450 F oven until egg whites
are lightly browned. Serve warm or cold.
