BASLER LACHS (Sauteed Salmon) Swiss

2 medium onions, thinly sliced
6 tablespoons butter
all-purpose flour
4 salmon steaks
salt and pepper to taste
juice of half lemon
sherry
lemon slices

Saute onions in 4 tablespoons of the butter until evenly browned.
Remove onions and keep warm. Add remaining butter. Lightly flour
salmon steaks,season, and brown evenly on both sides in the hot
butter. Cook until fish flakes easily when tested with a toothpick
or fork. Add lemon juice and transfer fish to hot platter. Add a
little sherry to the pan to rinse it. Spoon onion on salmon steaks
and pour sauce over all. Garnish with lemon slices. Serves 2-4
