HOPPEL POPPEL

1/2 pound bacon, chopped
3 pounds red potatoes
1 medium onion, chopped
6 eggs
2 tablespoons milk
salt and black pepper
paprika
2 tablespoons chopped parsley

Fry bacon until crisp, remove to plate. Reserve fat. Boil potatoes;
cool and coarsely dice. Fry in bacon fat until browned on both
sides; lower heat. Add onions. Lightly beat eggs with milk. Pour
over potatoes. Season with salt, pepper and paprika. Cook until
egg mixture sets. Slice into wedges. Serve with catsup. Garnish
with parsley if desired.
