Baltic German Beet Relish

1 qt raw cabbage
1 qt cooked beets
2 cup plus 2 Tbsp. sugar
1 Tbsp salt
1 tsp black pepper
1/2 tsp red pepper
2/3 cup grated prepared horseradish
white vinegar

Chop cabbage and beets. Add seasonings and horseradish. Mix
thoroughly. Cover with cold vinegar. Put into quart jars. Cover
and refrigerate. Will keep up to one year in refrigerator.
