Cheese Fritters 03

Ka"seschnitten Berner Art (Bern Cheese Fritters)
8 oz grated Gruyere cheese
2 eggs
2 1/2 fl oz milk
1 teaspoon Kirsch
fat for frying
6-8 slices bread
Mix grated cheese with the egg yolks, milk and Kirsch. Fold in
beaten egg whites, and spread mixture on bread. Heat fat in a
large frying pan and place bread, cheese side down, in hot fat.
When slices become golden brown, turn and fry briefly on the other
side.
